Napa's own Forno Piombo and Vinoce Vineyards invite you to the first evening along the Napa River. We are excited to have Chef Ryan Hatton prepare all of summer's best fare paired alongside Mt. Veeder's finest wines.

Syllabus: 

This 4 hour cooking class will delve deep into intermediate to advanced tips and tricks for cooking pizza in your wood fired oven. We will go over:

  • Making Pizza Dough

    • An in depth look into the ingredients and method behind creating your own pizza dough

  • Stretching Dough

    • No dough rollers here, learn the tricks and tips to rolling the perfect pizza dough

  • Toppings/Sauce/Cheese

    • What to know and how to find the perfect balance when putting the toppings on your pie

  • Ovens

    • An overview of the different types of wood-fired ovens used for cooking and general oven management

  • Fire

    • A closer look into selecting the firewood to use in your oven as well as how to properly build and maintain your fire

  • Heat

    • Knowing where the oven stores and distributes its heat is a critical component to cooking pizza, find out where the different heat zones in your oven are located and when to use them

Guests will receive a complimentary glass of wine open arrival. There will be wood fired bites served throughout the class along with lots of pizza towards the end. All guests will leave with their own starter to take home.
